Ingredients:
- 1 cup United With Earth Medjool dates, pitted
- ½ cup raw pistachios (plus extra for rolling)
- ½ cup almonds or cashews
- 1 tablespoon chia seeds (for extra energy & fiber)
- ½ teaspoon vanilla extract
- ¼ teaspoon sea salt
- 1 tablespoon coconut oil (optional, for extra richness)
- 2 tablespoons shredded coconut (optional, for rolling)
Instructions:
- Soak the Dates: If your dates are a bit firm, soak them in warm water for 5 minutes, then drain.
- Blend: In a food processor, pulse the pistachios, almonds, chia seeds, and salt until finely ground.
- Add the Dates: Toss in the softened dates, vanilla, and coconut oil. Blend until a sticky dough forms.
